  • Chicken – We used chicken breast tenderloins, but any cut of chicken will work. 
  • Tomatoes – Cherry tomatoes, halved.
  • Basil – Fresh basil leaves.
  • Garlic – Fresh cloves, minced.
  • Balsamic glaze – Store bought or homemade.
  • Seasoning – Salt, pepper, Italian seasoning.
  • Oil – Olive oil.
  • Pasta – Angel hair pasta.
  • Cheese – Parmesan cheese, grated or shredded.

How do you make bruschetta chicken with pasta? (step-by-step directions)

First, slice all the cherry tomatoes in half and cut the basil. In a small bowl, combine the tomatoes, basil, garlic, balsamic glaze, salt and pepper. Stir to combine and place in the refrigerator to chill.

Next, season the chicken with Italian seasoning and salt and pepper. Add oil to a medium size skillet and cook the chicken on medium heat. Bring a large pot of water to a boil and cook the noodles until al dente according to package directions.

Then, once the chicken is cooked, remove from the pan and add more oil to the pan. Add the tomato mixture from the fridge and cook, stirring until heated through.

Finally, add the cooked pasta to the pan and stir, making sure everything is coated. Add the chicken back to the pan on top of the pasta and sprinkle with parmesan cheese.

Season your chicken and cook it in a pan over medium heat. Stir together your tomato mixture and set aside to chill.

What in the does chiffonade mean?!

Chiffonade means “little ribbons” in French, which is exactly what you are about to create! Stack the basil leaves and roll them up, then slice them with a knife until almost shredded. This will create long strands (or ribbons) of basil mixed throughout the pasta.

What kind of pasta to use for bruschetta chicken pasta?

We used angel hair pasta for this recipe but it will work well with any type of pasta you enjoy, short or long. Try it with fettuccine noodles or even with bowtie pasta!

What cut of chicken to use for bruschetta chicken pasta?

This recipe calls for chicken breast tenderloins but you can use chicken breasts, or even boneless skinless chicken thighs.

Save any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or in the oven.

This pasta does not freeze well, so we don’t recommend it.

Bruschetta chicken pasta is a flavorful dish made with pasta, tomatoes, basil, garlic, balsamic glaze & chicken, topped with parmesan cheese!

Ingredients
 

  • pounds chicken we used tenderloin
  • 1 pint cherry tomatoes
  • cup fresh basil
  • 4 cloves garlic minced
  • 1 tablespoon balsamic glaze
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon Italian seasoning
  • 2 tablespoons olive oil
  • 12 ounces angel hair pasta
  • ½ cup grated parmesan cheese

Instructions

  • Slice all the cherry tomatoes in half and chiffonade the basil*. In a small bowl combine the tomatoes, basil, garlic, balsamic glaze, salt and pepper, slightly stir and place in the refrigerator while you prepare the chicken and pasta.
  • Season the chicken with the Italian seasoning and salt and pepper.
  • Add 1 tablespoon of oil to a medium size pan and cook the chicken on medium heat, turning every few minutes to brown evenly. (Chicken is down when it reaches an internal temp of 165℉.)
  • While the chicken is cooking, prepare your pasta according to the package directions.
  • Remove the chicken from the pan and set aside. Add your remaining tablespoon of oil to the pan and add the tomato mixture from the fridge and cook for 1-2 minutes on medium heat.
  • Add the cooked pasta to the pan and stir making sure everything is mixed together and coated.
  • Add the chicken back on top of the pasta and finish with grated parmesan.

Notes

*Chiffonade is when you roll the basil leaves and slice with a knife into thin ribbons.  You can also just chop the basil if you're in a rush!
